What the Northern Suburbs actually throw at a spit

Wind, if you are anywhere near the coast

Table View, Blouberg, Milnerton and Sunningdale take the south-easter properly from October through to about March. A spit fire in an open garden there is genuinely difficult to hold at a steady temperature — it will run hot on one side and the meat cooks unevenly. On coastal bookings we plan for it: the spit goes on the lee side of the house or in a courtyard, and we bring a wind shelter rather than hoping for a calm evening.

Inland — Durbanville, Brackenfell, Kraaifontein — it is markedly calmer and the cook is more predictable.

Durbanville wine valley venues

The Durbanville hills have a cluster of small wedding and function venues, and most are set up for outdoor catering with a designated spot for a fire. Worth checking two things when you book the venue: whether they have a preferred-supplier list, and whether open fires are permitted in their fire-season conditions.

Suburban gardens

Most Northern Suburbs private bookings are ordinary garden parties, which is the easiest version of this job — level ground, a gate wide enough to get equipment through, and a tap. If you have a paved patio and lawn, the spit goes on the lawn or paving, never on a wooden deck.

Can you cater in Table View when the wind is up?

Yes, but tell us the site is exposed when you book so we bring shelter and allow extra time. A south-easter does not stop the cook; it does change how we set up.

How early does the chef arrive in the Northern Suburbs?

About five hours before service, same as anywhere. Being local just means less risk of a traffic problem eating into that.
